Spoonful to spoonful, the cool but not chilly pea mint Parmesan soup at Co. restaurant on 9th Avenue in New York was buttery, sweet but not sugary. I wondered about the oil swirling on its surface like the sidewalk gasoline spills that fascinated me as a child, but this did not temper my slurping pace. There’s something lovely about re-meeting food, such as when I met gourmet pork chops as an adult, how they trumped what I thought pork chops were until that point. Likewise, eating pea soup this calming changed my mind about the green concoction that many of us, I imagine, shudder about: a thick effort complete with dunked bones. At Co. remember to ask for the soup sans croutons. For vegans, ask for no cheese. Also, this is a pizza joint for the most part, so this stop-in for soup is more on the snack-level or as an excuse to pair some food with a glass of wine.
